I have a dream

I live in a place that is restaurant challenged. You wouldn't think so, seing as it's a fucking "resort town," yet I can count on one hand the places worth spending some hard-earned lunch or dinner money on.

Finding a place that serves a decent salad is IM-FREAKIN-POSSIBLE. They just don't do salad bars here, and the places the do serve entree salads, well, they don't care, for the most part.

So I want to open a salad restaurant. Yeah, I realize I've only ever been a prep cook and a fry cook, but still, I think I could do it.

Lots of lovely entree salads with fresh, locally grown produce and fresh baked breads and rolls? Maybe some deli-style salad platters?

I'd call it "Saladre," a made-up Spanish word for salad.

What kind of restaurant would you open if you could?

I honestly think I'd open a dessert only restaurant. Not a bakery or a cafe, but a place that served dessert souffles and cakes and yummy puddings and stuff. It would have to be open very late though, for the after dinner crowd and they only way it would be profitable is if you had a full liquor license. You could serve specialty drinks too like those yummy root beer float drinks, and cognacs and expensive brandies and stuff.

My dream is to open up a comfort food restaurant. It will be home cooking from around the world and I will name it after my late grandmother. It will be called Lucretia's Place.

I would open a restaurant where the menu changed each week. Using seasonal foods and moving through various ethnic/regional dishes with some sort of theme for each week.

I know that it all sounds very obvious...but I live in chain restaurant hell, and daydream about variation....the possability of actually sitting down and choosing from plates that I have never had before.
